Gabbert redshirted at Missouri in 2010, and transferred after losing a quarterback battle to James Franklin the following spring. He originally chose Louisville, but left the team and didn't play in 2011. Instead, he worked on an associates degree in his hometown of St. Louis, according to the report.
He'll have three years of eligibility remaining.
Gabbert's older brother, Blaine Gabbert, started for Missouri in 2009 and 2010, and now plays for the Jacksonville Jaguars, who are located about 150 miles north of UCF's Orlando campus.
Gabbert fills an immediate need for the Golden Knights, who had two-year starting quarterback Jeff Godfrey, a junior-to-be, transfer after the 2011 season.
