What are you looking for when judging?

I deliberately chose to take myself out of the judging. I didn't want anyone to think there was any bias in play, since some of the food comes from places that we have done shows with. I just hope we have the broadest variety of food and regions involved.

Too soon to tell. Luckily the defense has really stepped up its game and Reggie Bush seems to really want it this year.

Which category do you think might have an advantage in the final table? I think the BBQ or chili winners have an edge, just because who doesn't like chili or BBQ?

I agree with you on BBQ, but chili can be polarizing. Plus, I think burgers are pretty hard to beat. And we don't know what kind of composed dish the chef will make. If the chef's dish is too pretty then I think the hearty foods like burgers will dominate.

Whether you like a dish is so subjective, how do you make it as fair as possible?

Because the agency that is connected with this event is the agency of record for hundreds of food competitions, so they will probably use the existing competitions and rules for the individual categories. Burgers have a set of standards, as well as others. The existing regulations are pretty clear and firm.

How's retirement treating you? Do you think, after the mandated 5-year waiting period, you'll make the Man v. Food Hall of Fame?

I don't know if Canton has opened up the 7-pound burrito wing, but it's an honor to be considered. I'm not retired, but I'm no longer doing food challenges, because the same guy doing the same stuff, I don't know how much anyone can watch. I'm not really retired. I'm just happy to be here and hope to help the ballclub.

How bummed were you about the Yankees going out like they did?

Tragic. Just tragic. To spend that much money on certain players and to have such a poor result is sad. I fear for their future moving forward, simply because there isn't much trade room and not much going on in the minors. Truly an overhaul is needed. I don't think it's fair that A-Rod is getting thrown under the bus, because it's a team sport, but his no trade clause could be hard in restructuring the team that needs very badly youth and new blood.

How excited are you about the Dolphins so far?

I'm extremely excited. I did not have as high hopes as one might think. The HBO Hard Knocks series helped a significant amount. There were a few losses that happened in the fourth quarter or at the end of the game that were heartbreaking, but it's trending towards a happy era in Miami.

Just because we're going to have so many of the absolute best in the country, if I were judging, it would be BBQ. BBQ is just heat, smoke, spice and meat and maybe sauce if you want to add it. But the great masters know the right amound, the right time and the right butchering and that combination can create some miraculous dishes.

For me, it's about an even balance between the flavors inside a variety of textures, a variety of temperatures, tastes. I like to see spicey juxtaposed with sweet and salty. The right combination of condiments and the right bread is essential.

Do you get recognized on the street? Do fans ever have any crazy food-related requests?

I get recognized pretty often, at least once or twice a day, which is crazy and awesome at the same time. I had a girl in NC ask me if she could feed me a spoon of banana pudding. I politely declined. I've had people ask me what I keep in my fridge to my bathroom habits. The most common one is that did I ever eat anything was disgusting that I ate on air and did I lie about liking it? It usually devolves into, I'm going to ____ city, where do I eat? Or, I went to ____ city and your show told me to go ____. That's my favorite one to hear.

Hopefully it will have a nice bark on the outside which will be a stark contrast to the creamy, rich melt in your mouth on the inside. I like a good spice rub. Even though in Texas it's considered a no-no, I am a fan of a good BBQ sauce. But it shouldn't rely on the BBQ sauce.

How did the food challenges in MvF and the sandwiches from Best Sandwiches get chosen? Did you have the final say? Someone else?

I had final yes or no because I was the one eating it. I was never going to let someone else tell me I had to eat it. I won't lie, we went through a couple of producers and directors who thought they could. I was blessed to work with people who had an incredible breadth of experience. We would work as a team to get a giant database. We'd look at the season as a whole, and not look at what was a good challenge, but what made for good TV. There might be a good burger challenge, but you can't do 8 of them if you only have 20 episodes. And some people don't put a lot of artistry into a challenge. A good challenge has to be an accomplishable feat. It can't just be a bunch of crap on a plate. Something you could eat and wanted to eat because of your desire of the food. The pizza with the spicey peppers on it is a good example.
